Grown Up Taco Salad

Tomato salsa:
Dice 3 tomatoes
Dice 2 tablespoons poblano (jalapeƱo would work too)
Thinly slice the roots of 3 green onions
Combine and generously seasons with salt and some pepper
Squeeze half a lime over and stir

Corn:
Drain one can of corn, brown over medium heat
Season with salt and pepper to taste
Sprinkle with Trader Joe's Everything But the Elote seasoning
Crumble some queso fresco and combine

Avocado:
Dice 3 avocados
Season with salt and pepper and half a lime

Beef:
Dice one small onion. Brown in pan for a couple minutes then add ground beef. Cook until done and season with salt. Season with Trader Joe's Chili Seasoning Blend. Add a little beef broth if it appears too dry

Crema:
Combine sour cream, hot sauce to taste. Add water until its a drizzling consistency. Season with salt and pepper.

Cut and clean lettuce and assemble all the toppings. Serve with Tortilla chips.

Pot Sticker Sauce

Combine:


1/4 cup water
1/4 cup soy sauce
2 tablespoons white vinegar
2 tablespoons sugar
Sliced green onions (optional)

Serve with frozen pot stickers, cooked according to package directions. Trader Joe's has good ones.

Greek Chopped Salad

Diced English cucumbers
Diced tomatoes or halved cherry tomatoes
Diced red pepper
Diced yellow pepper
Sliced Kalamata Olives (not grocery store brand)
Feta cheese
Fresh chopped oregano
Fresh chopped Italian Parsley
Olive oil
Salt to taste

Mix ingredients and enjoy!

Ground Beef Bulgogi Bowls

5tsp white wine vinegar
1tsp sugar
Shaved cucumber (using vegetable peeler)

Mix together.

Make rice.

Saute a large handful of shredded carrots, set aside.

Brown 1 lb of ground beef. Make the sauce from this recipe:

Mix sour cream and Sriracha to desired spicyness.

Serve all ingredients over the rice.

Smokey Five Bean Chili

1 tablespoon oil
1 large white onion, diced
1 large poblano pepper, diced (remove seeds and membrane for less spicy)
2 teaspoons minced garlic
2 pounds ground beef
5 cans of different beans (black, pinto, light red, great northern, black eyed peas)
3 cans petite diced tomatoes
1 can tomato sauce
1/2 cup beef broth
2 teaspoons smoked paprika
1 tablespoon chili powder
2 teaspoons cumin
1 tablespoon oregano
1/4 teaspoon cayenne pepper (optional)
1 teaspoon salt (plus more to taste)
fresh ground pepper
1/3 cup crushed tortilla chips

Saute onion and poblano in oil. Add garlic, saute for a couple more minutes. Add beef and cook until brown (you may want to drain off some fat at this point if you used a beef with a high fat content). Add beans, tomatoes, tomato sauce, beef broth, and all the spices. Add crushed chips (this takes the place of masa by thickening the chili but also adds flavor). Season with salt to taste (after you add chips, because that can add a lot of salt).

Easy Baguette Recipe

2 cups warm water
2 teaspoons yeast

Combine and let sit for 5 minutes.

4 cups flour
1 teaspoon salt

Let rise until doubled- about an hour. Mold into long baguette shapes and generously grease baguette pan. Add coarse sea salt to the top.

Cook at 450 degrees for 18-22 minutes.
