Best Instapot Barbecue Pulled Pork

Spice rub:

3 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
3 tablespoons coarse sea salt

Favorite barbecue sauce
3-4 pound pork roast, shoulder or butt (I use boneless because I think it's easier to shred, but bone in gives it more flavor and keeps it from drying out)

Combine ingredients to spice rub. Rub all over pork roast and let it sit for at least one hour, or up to 24. Place in Instapot with the wire rack on the bottom. Add some chicken broth (1/2 to 1 cup- otherwise there won't be enough liquid for the pressure cooker to function properly), but don't wash off the spice rub! Cook for 60-75 minutes on high pressure. When it's done let it release naturally for about 10 minutes. Shred pork and add barbecue sauce. Serve with coleslaw and rolls. 

Super Healthy Green Chili Chicken and (Cauliflower) Rice

I am pretty sure this recipe would pass the diet plans across the board-keto, paleo, you name it!

One recipe Southwest Style Instapot Chicken, shredded (Rotisserie chicken works too)
1 tablespoon oil
2 poblano peppers, diced
1 white or yellow onion, diced
1 1/2  teaspoon cumin
1 jar Hertz Green Salsa (or other green salsa but Hertz is hands down the best)
2 cups frozen cauliflower rice
Chicken broth as needed
Cilantro, chopped

Start chicken in Instapot. While it's cooking, dice poblano peppers and onion. Heat large pan to medium, add oil then peppers and onions. Cook until onions and peppers for about five minutes until onions are translucent. Season with salt to taste. Add garlic and cook for another minute. Add cumin and stir. Next add riced cauliflower and green salsa. If it needs a little extra liquid add chicken broth (I use what is left from my Instapot). Give it a good stir and then add shredded chicken. Place lid on pan and let it simmer for just a few minutes (5-10 should do it), stirring as needed. When finished, stir in cilantro. Serve with sour cream and chips, unless you want to keep it healthy and then just eat the way it is!

Southwest Style Stuffed Peppers with Chicken

6-8 medium sweet peppers (red, yellow, or orange)
A little olive oil
1 onion, diced
3 garlic cloves, minced
3 oz can of mild green chilies
1 14 oz can black beans, drained and rinsed
1 recipe Southwest style instapot chicken (or shredded chicken)
1 cup frozen riced cauliflower (1 cup cooked rice works too, but definitely not as healthy)
1 cup frozen corn kernels
2 green onions, sliced
1 tsp chili powder
1 tsp kosher salt, plus more to taste
1/4 black pepper, plus more to taste
1 14.5 ounce can diced tomatoes, preferably fire roasted
1 1/4 C jack or pepperjack cheese, divided
3-4 Tbs chopped fresh cilantro
tortilla chips, just a handful and more for serving if desired.
Preheat oven to 375.  Prepare peppers by washing, slicing tops off, and removing insides.  Place peppers on a cookie sheet and drizzle or spray a little oil. Season with salt. Roast for about 4 minutes
Heat oil in a 12-inch skillet over medium-high heat.  Add onions and garlic and cook until softened, about 5 minutes.  Add cauliflower, corn, beans, green chilis, tomatoes, green onions, chili powder, kosher salt, and pepper. Stir until corn and beans are heated through, about 5 minutes. Add chicken and stir to combine. Remove skillet from heat and add 1 cup cheese, and cilantro.  Stir to combine well and give it a taste.  Add additional salt, pepper, and chili powder to your liking.  Then evenly divide mixture between peppers. It's okay to have extra filling! You can use it to refill the peppers if you have some extra hungry people! 
Top peppers with remaining cheese.
Bake for about 20 minutes until the cheese melts on top (if the chicken mixture was pretty hot when you filled the peppers, check on them at about 15 minutes). Top with crushed tortilla chips.

Southwest Style Instapot Chicken

Place 6-8 frozen chicken tenders in the Instapot. Sprinkle with:

1 tsp chili powder
1 tsp cumin
1/2 tsp coriander
1/4 tsp garlic powder
1/4 tsp onion powder

Pour enough chicken broth to cover the chicken. Stir all ingredients to combine. Set Instapot for 13 minutes. When it is done, allow to naturally release pressure for about 5 minutes. Remove chicken from Instapot and shred with a fork.

Great on tacos, taco salad, enchiladas, etc.

Jiffy Cornbread Mix Hack

I love the idea of a Cornbread Mix but it can be so dry! I accidentally made this and it turned out to be amazing cornbread.


2 packages jiffy cornbread mix (ignore instructions) 
2 eggs
2 cups of milk

Preheat oven to 325 degrees. Butter a 9x9 square pan. Mix ingredients and allow to sit for 3-5 minutes. Pour into pan and bake for 45-60 minutes until a toothpick comes out clean. 

Serve with honey butter.

Cauliflower Breakfast Casserole

4 cups frozen seasoned cauliflower rice, completely thawed
2 cups shredded mozzarella
1 cup frozen spinach, cooked and drained
8 strips of bacon, cooked and crumbled

7 eggs
1/2 cup milk
1/2 teaspoon salt
8-10 turns of fresh black pepper


Place cauliflower rice on bottom of 9x13 inch pan (you might want to use some paper towels to absorb some of the liquid from the thawed cauliflower). Cover with cheese, then little clumps of spinach on top of that. Next spread the bacon on top. Whisk eggs, milk, salt and pepper together. Pour evenly over the cauliflower while continuously mixing the egg mixture. Let the eggs settle for a few minutes and place in a 375 degree oven and bake for 25-30 minutes, until the eggs are cooked and the cheese is a nice golden brown color.

Perfect Baked Sweet Potatoes

1. Wash AND dry sweet potatoes.
2. Poke them each twice with a fork.
3. Bake at 375 degree for 1 hour and 15 minutes (even with small potatoes).
